Our Story

 Santo Ceviche was established in 2018 by siblings Artie and Diana Montoya, had a  clear vision of bringing a fresh and modern concept to the Jersey Shore area, with a  unique twist on ceviche. With the help of a local highlander, their journey began in  a beach lot on Bay Ave in Highlands, NJ. Although the start was challenging with  few customers, Artie and Diana persisted with their passion for sharing their  delicious ceviche recipe. They worked hard to educate people about their unique  product and soon gained popularity among locals and visitors. Their dedicaƟon and  hard work turned a tough beginning into a success story they are proud of today. 


 In 2019, Santo Ceviche's popularity grew even more, and they were invited to  participate in a range of festivals and events, including the Governors Ball in NYC,  The Asbury Park Fest, and the Twilight Bike Ride, among many others throughout  the Tri-State area. Their ceviches were a hit and quickly became a crowd favorite. 


In 2020, Santo Ceviche became part of the New York Food Truck Association, which  opened doors to serve their fresh and flavorful ceviches to large crowds and  corporations at private events in exciting locations such as Governors Island.

 

After five years, Artie and Diana are excited to announce the opening of their first  brick and mortar location in Belmar, NJ. This town holds a special place in their  hearts as it was their first home in America after immigrating from Colombia. They  are thrilled to share their passion for food and culture with their community. 


While they're excited about their new location, they'll never forget the support and  love they received from the Highlands community. Without the support of all the  locals, they wouldn't be where they are today.

Santo Ceviche takes elements and flavors from Peruvian and Latin American cuisines to create fresh and delicious seafood dishes. Artie and Diana love working together under a family-owned business and creating a unique experience for their customers.
